*I have used coconut oil (solid state) for the butter in the muffin mixture and the streusel topping, and it is great!
Muffin Mix:
1/3 cup brown sugar
1/4 cup butter, softened
2 medium (1 cup) ripe bananas, mashed
1 egg
1/2 t vanilla
1 cup flour
1/2 t baking soda
1/2 t ground cinnamon
1/8 t salt
Streusel:
1/2 c flour
1/2 c brown sugar
1/4 c butter, softened
1/2 c mini chocolate chips
Heat oven to 350. Place paper cupcake liners into 12 muffin pan cups. Set aside.
Combine brown sugar and butter in large bowl. Beat on medium speed until creamy. Add bananas, egg, and vanilla, and mix until well-mixed.
Combine flour, baking soda, cinnamon, and salt in medium bowl. Stir flour mixture into banana mixture, just until moistened. Spoon batter into muffin cups.
Combine all streusel ingredients except chocolate chips in small bowl. Mix well. Stir in chocolate chips. Spoon evenly over tops of muffins.
Bake for 18 to 25 minutes, until light golden brown. Let stand 5 minutes and remove from pan to cooling rack.
