Last year, Brian and I had a yummy breakfast at a Bed and Breakfast in Traverse City, MI – Chateau Chantal. I’ve been wanting to try to replicate it at home and finally did, almost a year later!
Sautee some onions, mushrooms, and tomatoes in butter and season with salt and pepper. Place entire mixture in the bottom of a baking dish and cover with halved boiled eggs. Top boiled eggs with slices of cheese and a bit of salt and pepper. (I used mozzarella this time). Bake in a 350 degree oven for just a few minutes to warm up the eggs and melt the cheese. Serve one or two of the egg halves with the sauteed mixture on a plate with toast as a side. EAT AND ENJOY!
